Collection: kiridashi

This type of knife called Kiridashi is essential in any good workshop. Properly sharpened, it is used for many tasks. It is a cutter, a slicer, a knife for leather, a knife for marking or carving wood. There are different types of kiridashi, the kogatana are longer and thinner (kuri-kogatan: much longer), the shirabibiki have a much shorter bevel, the kensaki are double beveled. All these kiridashi have an ura (hollow) like on many Japanese tools.
