The bonito (dried tuna) shaver, called "Katsuobushi" in Japanese, is one of the most important utensils in Japanese cuisine for shaving the very hard dried "bonito" fish into thin flakes. These flake-like shavings are used to season food or to prepare the Japanese broth known as "Dashi".
The body of the Japanese "kanna" plane is made of Japanese white oak. It measures 241 X 72 X 27mm. The "dai" block can be easily removed for (dry) cleaning. The box consists of a lid to protect the blade when not in use and a drawer to easily collect the shavings.
The blade is made of high-carbon "Aogami" blue paper steel (resistant to oxidation). I have sharpened it to 6000 grit. This Katsuobushi shaver is therefore ready to use.
Since it is a mandoline, hard vegetables or well-dried cured meats can also be cut into thin slices.
