This Japanese "Deba" knife is 165mm long (cutting edge length). It is 6mm thick at the middle of the blade. The lamination is very well executed. The ura is very clean. It is a nearly new knife imported directly from Japan. I have sharpened it while respecting the shinogi. It is from the "Fujijiro" brand, which is now discontinued.
It is a two-layer high-carbon white steel knife. It is well-made. The handle is oval-shaped. It is made of magnolia wood with a plastic ferrule (the ring at the top of the handle). Its style corresponds to that of the city of Sakai (the main city for knife-making).
It is a thick knife for processing fish. From deboning to trimming, it is the perfect knife for cleaning fish. The unique feature of the Deba is that it has only one bevel; the back is flat. This changes the way the knife cuts. Although originally designed for cleaning fish, it is very pleasant to use for many other tasks.
Caution! This is a carbon steel knife, so it will oxidize; therefore, no dishwasher, and do not cut acidic foods. It must be wiped dry after each use and oiled regularly.
