This magnificent Japanese "Santoku" knife is 170mm long (cutting edge). Its thickness is 1.8mm at the middle of the blade. It features a beautiful pattern with its 5-layer damascus steel.
This knife is hand-forged by master blacksmith "Kunio". His knives are crafted in the famous cutlery village of Echizen in the Fukui prefecture. It is made of blue paper steel, which is a steel that contains tungsten and maintains excellent edge retention.
The handle is oval-shaped and crafted from charred chestnut wood. It is a very elegant knife with a beautiful matte finish that reveals the damascus pattern.
Santoku knives have a hybrid shape with a profile featuring a dipping tip, a wide blade like a Nakiri, and a slightly curved blade like a chef's knife. Santoku means "three virtues," referring to the three qualities it excels at.
It is the perfect kitchen knife for cutting vegetables, making thin slices of fish, and mincing herbs. It has a double bevel. It will be very easy to sharpen.
