This magnificent Japanese "Santoku" knife is 180mm long (cutting edge). Its thickness is 2mm at the middle of the blade. It features a lovely polished hammered finish. It is crafted by the venerable "Hiro Masui" (80 years old) in the city of Seki.
The core of the blade is made of blue paper steel (Aogami), a steel that contains tungsten and maintains excellent edge retention. The handle has a Western shape, crafted from a piece of Padauk quince wood. Its bolster is preceded by three blue, red, and green rings. It includes a brass insert and a multi-metal patterned rivet.
Santokus have a hybrid shape with a profile featuring a drop point, a wide blade like a Nakiri, and a slightly curved blade like a chef's knife. Santoku means the three virtues, referring to its three qualities.
It is the perfect kitchen knife for cutting vegetables, slicing fish thinly, and mincing herbs. It is double-beveled. It will be very easy to sharpen.
