This small Japanese "Kaisaki" knife has a 120mm blade length. It is 3mm thick at the middle of the blade. It features a hammered "Tsuchime" finish.
It is a knife from the "Ikeuchi" brand, which comes from the "Ikeuchi Hamono" workshops in the city of Miki, the cradle of toolmaking in Japan. The manufacturing quality is extremely rigorous in the Ikeuchi workshops, founded in 1953. Since that date, four generations of blacksmiths have succeeded one another, perpetuating the tradition of the various models under the Mikihisa and Ikeuchi brands.
The handle is oval-shaped. It is made of magnolia wood with a resin ferrule (the ring at the top of the handle). It is made of hand-forged, high-carbon, two-layer steel. The lamination is very uniform and the shinogi is very well defined.
The Kaisaki is a small, single-edged knife used for slicing small fish. It is also called Baran-giri when used for cutting decorative leaves.
Very light in the hand, it is highly maneuverable for cutting and allows for very detailed work. The unique feature of this knife, like the vast majority of Japanese knives, is that it has a single bevel; the back is flat. This changes the way the knife cuts. Although originally designed for cleaning small fish, it is very pleasant to use for many other tasks.
Caution! This is a high-carbon steel knife, so it will oxidize; do not put it in the dishwasher and do not use it to cut acidic foods. It must be wiped dry after each use and oiled regularly.
