This small Japanese "Kaisaki" knife has a 120mm long cutting edge. Its thickness is 3mm at the center of the blade. Its finish is hammered "Tsuchime".
It is a knife from the "Ikeuchi" brand. which comes from the "Ikeuchi Hamono" workshops in the city of Miki, the cradle of toolmaking in Japan. The manufacturing quality is very rigorous in the Ikeuchi workshops founded in 1953. Since that date, four generations of blacksmiths have succeeded one another and perpetuated the tradition of the various models of the Mikihisa and Ikeuchi brands.

The Kaisaki is a small single-edged knife used for slicing small fish. It is also called Baran-giri when it is used for cutting decorative leaves.
Very light in the hand, it is very maneuverable when cutting and allows for highly detailed work. The particularity of this knife, like the vast majority of Japanese knives, is that it has only one bevel; the back is flat. This changes the way the knife cuts. It is a knife that was originally designed for cleaning small fish, but it is very pleasant to use for many other tasks.
