This Japanese kitchen knife called a "Sujihiki" was crafted by Mr. Nao Yamamoto in Sanjo in the Echigo prefecture. This type of knife is produced in very small batches. It features a magnificent "Tsuchime" hammered geometric pattern.
Nao Yamamoto was born in 1979. After apprenticing with Masami Azai (Echizen Marukatsu), he continued his training at Kamotou Hamono in Takefu. He then returned to Mr. Azai, inheriting his techniques as well as the "Echizen Marukatsu" signature. Today, Nao Yamamoto continues one of the most remarkable forging practices. He crafts kitchen knives as well as short swords, and his talent is expressed in many forms.
The edge length is 210mm, and the total length is 340mm. The handle is Western-style, made of red Pakkawood. It has a double-bevel edge and its blade is hand-forged from Ginsan steel (also known as Silver Steel No. 3).
This Sujihiki is beautifully forged. This type of slicing knife will be very practical for numerous tasks: mincing herbs, slicing fish or meat.
